I have been testing the files you sent me but I cannot reproduce (in both XCode4 and 3).
Can you download the XCode4 release from developer.apple.com and test it again? It should come bundled with the latest SDK's.
Thanks for taking a look, Andos. So it's something on my end then... I'll take a look at it later and see if I can figure it out. I am unable to download Xcode 4 as it's only available for Lion and I can't afford to upgrade to Lion. Thanks though, it's nice to know my Apps work, just have to figure out what's up at my end that's causing them to not work...
Hi Paul, I did notice a Snow Leopard 4.1 version on the iOS developer website, but is giving access denied error for me (even though I'm in the paid program!). I've sent a report to Apple. The links might work for you:

I changed the target build from iPad iOS 4.3 to iPad iOS 4.2 and IT WORKED!!! My App appeared in the Xcode simulator! FANTASTIC!!! Thanks to everyone for chipping in with advice, very much appreciated!!
