    I'm not sure what you mean... But logically the player would carry small objects in one hand right next to his body, and large objects in both hands in front of him...
    Removing collisions from the item and the player is merely a temporary thing, and should be restored once the player drops the item... This way nothing wierd/unexpected will happen whilst carrying items...

    The easiest way is to toy around with it until you get the desired result!

    I know, that's how I did it,but multiplied the force by 10 so that it would follow the hand more accurately.
