how would i set it up so if the player referred a freind to the game they could unlock a level or something?

Technically, Apple does not like incentivised installs (giving something away for installing your app). But you could do it through a remote server where your app gets the signal to unlock the extra content once you meet a condition (in your case installing the app). This one thing you are not allowed to do is give away something that you also charge money for on the Appstore. So the level you give away can't also be in in-app purchase.
