    Grab System Time.

Is there a way to grab device or system time to the put that data into the clock object or use it to to start a countdown? Or would this need to be programmed in via an extension

You can get the date/time with the clock object itself

Maybe it's just me, but I spent ages trying to set the Date/time to something else and it doesn't work (defaults back to system date/time). Had thought I could use it to display dates in the correct format for the region (eg USA, UK, Japan, etc)

I tested it and it grabs the device time (my device time was actually wrong as I had set it on holiday and not set it back to UK time). I used date/time as countdown objects and set those based on the hours/minutes pulled from the date/time object and that worked fine too. (tested on an ipad)
