Disable default hotkeys

Super n00b question here, but is there a way to disable the f2 restart function? I tried searching, but as you can imagine, "f2" brings up a phone-book.

Yes you can.
Double click on the application (in the workspace toolbar).
In the properties section click on the little computer/monitor icon.
Under "Menu" press the Edit button.
It will bring up the application menu editor, from there you can add/remove/change shortcuts for the application.
